Eldons Original Jerky Seasoning with Cure
Eldon's Original Jerky Seasoning produces a slightly hot jerky reminiscent of the old time jerky taste we grew up with. Seasons 25 lbs. of meat. No MSG. Packet of cure salt enclosed.
Ingredients: Salt corn syrup solids, spices, garlic, paprika, natural hickory smoke flavor, chili pepper, tumeric & red pepper.
Directions: For 20 LBS: combine 20 lbs meat strips, seasoning, cure packet & 2 1/2 quarts cold water; mix well. Refrigerate overnight to cure. Next day, remove from liquid, do not rinse; spread out on drying racks and dry in usual manner in smoker, oven or dehydrator.
For Ground Jerky: Combine 25 lbs ground meat, seasoning, cure salt and 1/2 -1 cup cold water; knead well and roll out 1/8 - 3/16" thick patties between 2 sheets plastic wrap or shoot out strips using a jerky gun. Refrigerate overnight to cure; next day, dry in usual manner.
