Eldon's Pepper Stick Seasoning
Eldon's Pepper Stick Seasoning is extremely appealing to children and folks who like their sausage sticks slightly hot.
Salt, sugar, flavorings, spices, & spice extractives, monosodium glutamate, garlic powder & sodium erythobrate.
FOR 25 LBS: Combine 23 lbs of meat and 2 lbs beef fat, grind twice through a 3/16" grinder plate, or use 25 lbs ground meat, add seasoning, cure packet & 1-2 cups ice water---for a richer product add 1/2 cup flavor 86 or 1 cup non fat dry milk, knead well. Stuff into 22-26 mm collagen or natural sheep casings, twist/tie into 8-10" links. Refrigerate overnight to cure---next day hang in smokehouse or oven & smoke/cook in usual manner until internal temp reaches 160 degrees F; remove, hang at room temp till cool.
