Slim Jim Snack Stick Seasoning
Eldon's Slim Jimmy Seasoning produces a sausage stick with lots of spicy flavor.
Seasons 25 lbs. of meat.
Salt, corn syrup solids, spices, dehydrated garlic & less than 2% sodium aluminosillcate to prevent caking.
For 25 LBS: combine 22 1/2 lbs of meat, 2 1/2 lbs beef fat, grind 1x through a 3/16" grinder plate, add seasoning, cure packet & 2-3 cups ice water, then grind once more & knead well. Stuff into prepared 19-26 mm collagen or 22-24 mm sheep casings, tie or twist into 8-10" links. refrigerate overnight to cure. Next day hang in smoke house or oven & smoke/cook in usual manner until internal temp reaches 160 degrees F. Remove & hang at room temp till cool.
