Texas BBQ Jerky Seasoning with Cure
Ingredients: Salt, sugar, spices, natural flavorings, natural smoke flavorings, paprika & spice extractives.
Directions: For 20LBS: Combine 20 lbs meat strips, seasoning, cure packet & 2 1/2 quarts cold water; mix well. refrigerate overnight to cure. next day, remove from liquid, do not rinse, spread out on drying racks, dry in usual manner in smoker, oven or dehydrator.
For Ground Jerky: combine 20lbs ground meat, seasoning, cure salt and 1/2 -1 cup cold water; knead well roll out 1/8 - 3/16" thick patties between 2 sheets plastic wrap or shoot out strips using a jerky gun. refrigerate overnight to cure, next day, dry in usual manner.
